Well, most of my onions have been harvested, and i am slowly starting to pull up some of my garlic that I bought from Mary‘s heirloom seeds. In addition, my dill bolted and while i am saving the seed heads for seeds, the ferny leaves were already drying so they were perfect for my recipe. I used my Dukat Dill for this recipe and my kitchen now smells of dill, onions, vinegar and garlic because well that is what happens when you pickle onions!

I used Mary’s recipe and doubled it and then I added 1/4 tsp of mustard seed to each jar as well so that is the only difference with my recipe. It is the first time that I made pickled onions and I should be able to try a jar tomorrow! I tamped the onions A lot but apparently still not enough… oh well, I guess we have oniony pickle juice too! They still look so amazing!
