We finally had some much needed rain! I cannot wait to watch my veggies explode from joy! Because we spent the day inside, I decided to process the ripe tomatoes that have been lounging around on the counter. I made basil diced tomatoes.

Out of about 5 lbs of tomatoes, I produced a whopping two pints of basil diced tomatoes.

One thing I did was I peeled them and saved the tomato skins for the dehydrator. The tomato peels will be put in a blender and will be pulverized into tomato powder which can be reconstituted by adding a tiny bit of water or oil to make tomato paste.

In addition to tomato peels, I dried onion peels as well. i am going to pulverize these into a powder as onion powder.
Finally, i had picked some Moldavian dragonhead balm and i dehydrated this as well. Once dried, i put it in my little jar for use as tea. The jar as pictured is one from Oui yoghurt, I found some lids that are designed for these jars on Amazon, so now I can repurpose these cute little jars for tea! This tea is so amazing as an iced tea. it is really refreshing with a lemony flavor. To be honest, the actual herb smells a bit like marijuana mixed with lemons, but only up close. From a little distance, it is more lemony.

I suppose this makes for a successful and productive day!

I will post the recipe for basil diced tomatoes the moldavian dragonhead balm tea is amazing! It is in the mint family and very easy to grow.
I am all for homesteading and growing my own stuff, there is just way too much turmoil in the world right now to not be frugal and take care of yourself from your own backyard… everyone needs a backup plan…
