Einkorn grain is considered an ancient grain.

Einkorn is one of the oldest wheat grains around. It has been eaten for over 12,000 years. Evidence suggests that one cultivated this grain 8,000 years BC.

As a grain, this grain is more nutritious and it also contains more protein.

Another grain, of which I only have a little bit, is Emmer grain. It is said that Einkorn is the predecessor of Emmer. Both are far relatives of today’s wheat.

One reason why I started milling my own flour and using ancient grains is because the majority of wheat grown today has been drastically altered from its original form. It is not to a point yet where it is all genetically modified, but it is by no means the original wheat that was once grown. I am going back in time to find real food for the health of myself, and my family.
