This is a nice hearty meal soup for a dreary day… Today Ophelia has been working her way through Central Virginia, and then my daughter stopped in with her roommates to have dinner with us. She specifically requested a pot of leek soup with enough to take home so I doubled this recipe and she took home a bunch of it and we all had some soup as an appetizer to chicken and rice (Arroz con Pollo).
